

2 Slices of Irwin's Nutty Krust
2 Medium Sized Eggs
Mayonnaise
4 Large Sprigs of Watercress
Boil the eggs in water for 8-10 mins until hard. Place the saucepan under cold running water until the eggs are cool enough to shell by hand. Once the eggs are shelled, place in a bowl and mash with a fork.
Gently chop the watercress and add to the crushed egg. Place 2 heaped tablespoonfuls of Mayonnaise into the bowl and mix thoroughly.
Place the egg mixture onto a slice of Nutty Krust, (unbuttered if you wish) and top with the other slice of Nutty Krust. Cut in diagonals to serve.
