What does "GI" mean? GI stands for Glycaemic Index which is a way of ranking foods according to how quickly they are digested. The lower a foods GI ranking, the slower it is digested, helping you to feel fuller for longer to avoid over eating and possible obesity. With a GI ranking of 39 it is the only bread to be classified as low GI in Northern Ireland.
