These pancakes were traditionally eaten on Shrove Tuesday as they are made with eggs, milk and butter, all of which would have been forbidden by those who strictly observed Lent.

The freshness and fluffy texture of the pancakes lies in the cooking process. Irwin's pancakes are cooked as soon as possible after mixing as the acid in the buttermilk starts to react with the baking soda straight away. For that reason the griddle or hot plate is heated before adding the ingredients.
