GUINNESS WHOLEGRAIN BREAD
Potted Prawns with Guinness Wholegrain Bread
Serves 4 – small ramekin dishes
60g (2 oz) unsalted butter
2 garlic cloves, peeled and crushed
2 tsp freshly squeezed lemon juice
1 tsp finely grated lemon zest
Pinch cayenne pepper
Salt and freshly ground black pepper
340g (12oz) cooked and peeled local prawns
Place the butter, lemon juice, zest, cayenne pepper and crushed garlic in a saucepan and gently heat for 2 minutes. Add the prawns and season with salt and pepper. Divide the prawn and butter mixture into four rameken dishes, chill and serve with wedges of lemon and thick slices of Guinness Wholegrain bread.
